Cooking segment: Mixed berry parfait for Christmas breakfast or dessert

MACON, Georgia (41NBC/WMGT) – With Christmas just two days away, many people have Christmas dinner figured out, but how about breakfast or dessert?

Chef Scottie Johnson, a private chef in Houston County and winner of the Georgia Seafood Festival, has an idea for you.

Mixed Berry Parfait:


– 1 cup heavy cream
– 2 tablespoons powdered sugar or more for desired sweetness
– 1 teaspoon cinnamon
– 1/4 teaspoon vanilla extract
– 1/4 teaspoon rum extract
– Strawberries, hulled and quartered
– raspberries, fresh
– blueberries, fresh
– honey
– granola oats
– mint leaves, for garnish


Chill a medium size bowl in the freezer until ready to use. Prepare fruits and mix together with drizzle of honey, then set aside. Remove chilled bowl from freezer, add heavy cream, sugar, cinnamon and extracts. Mix until stiff peaks with a hand mixer (do not over mix). Place in refrigerator until ready to use. To build the parfait place berries in bottom of small glass, followed by whipped cream. Repeat process, then garnish with oats and mint, if desired. Keep chill until ready to serve.
