Fares on a Stick Iconic this Fair Season

PERRY, Georgia (41NBC/WMGT) — Fried foods are a must at the fair. Corn dogs and funnel cakes top the list for most iconic during the fair season, but what about other goodies found on a stick?

Gabby South manager Jay Rounds said, “We do pork butt on a stick.”

Pork butt is no joke for the guys at Gabby South.

“Pork butt is a pork butt or a slice steak from the butt which is actually the shoulder of a pig, not the butt – but years ago in Boston they named it the Boston Butt,” said Rounds.

It is skewered with a stick and grilled in big meaty slabs on a charcoal pit.

Rounds added, “We don’t put any wet seasoning on it, but we do have that if a customer wants.”

The dry rub they use is something the vendors call Gabby Dust.

“It’s a secret, under lock and key,” Rounds said.

Also at the fair, another popular item on a stick, cheese.

“The idea is basic, we wanted to offer some fair goers something less expensive than our usual fare so we came up with cheese on a stick,” said owner of Hot Wisconsin Cheese Randy Reichert.

It’s a chunk of handcut cheddar, dipped in a light tempura batter, and quickly deep fried to a golden perfection.

Reichert added, “All of our cheese comes from Wisconsin…everything here is authentic, it’s nothing you can buy from the large grocery chains.”

The last trip before leaving the fair, Fruit and Cream Hut, because no meal is complete without dessert.

Owner Jason Belcher said, “Ice cream is just homemade ice cream that we do.”

Ice cream, cheesecake, and some of your favorite frozen fruits can all be found dipped in chocolate, rolled in crushed peanuts, and served on a stick.

Although the vendors weren’t willing to hand over their secret recipes, you still have time to try these vittles on a stick. The Georgia National Fair ends Sunday, October 14th.
