Amanda’s Cakery Whips Up Vanilla Bean Simple Butter Cream
MACON, Georgia (41NBC/WMGT) — From wedding cakes and smash cakes, to coconut and strawberry frostings, Amanda’s Cakery can whip up just about anything to satisfy a sweet tooth!
Owner Amanda Meadows said, “We have 12 different flavors everyday.”
Meadows started off as a baker’s assistant, a college student just trying to pay her way through school. Now she makes everything from scratch, including the vanilla bean simple butter cream.
“We use that mainly on top of our vanilla bliss cupcake as well as some of our fillings for our wedding cakes and birthday cakes,” Meadows said.
The icing is versatile and packed with a ton of butter, whipping cream, a whole vanilla bean, and powdered sugar. Customers don’t complain that it’s piled on about a mile high.
“I just name the cupcakes that I feel are accurate and true to their flavor,” said Meadows.
With so many flavors and fillings to choose from, it’s hard to pick just one. Meadows specializes in birthday cakes, wedding cakes, cupcakes and the list of flavors and frostings are endless.
Regular customer Lutebrean Worthey said, “I’ve tried the strawberry, the almond, the red velvet, and the keylime.” Worthey also added her sister recently put in an order for a wedding cake at Amanda’s.
Meadows is a cake making machine, according to her customers.
“She takes time in making them because they don’t taste like other cupcakes,” said Worthey.

Amanda’s Cakery Vanilla Bean Simple Butter Cream Recipe:
1 lb softened butter (4 sticks)
1 whole vanilla bean
1/4 cup whipping cream
6 level cups Confectioner’s sugar
– Beat softened butter until creamy, add vanilla beans, and then add heavy whipping cream. Add sugar one cup at a time until all ingredients are combined.
