Thanksgiving Recipe Box: Lee Family Pumpkin Chip Muffins
MACON, Georgia (41NBC/WMGT) — In the spirit of Thanksgiving, Daybreak anchor Melissa Lee welcomed you into her kitchen to share a special edition of the weekly segment “Melissa’s Recipe Box.”
Pumpkin chip muffins are a family favorite at the Lee household and they’re enjoyed each Thanksgiving. They’re best served warm with a scoop of vanilla ice cream or as a breakfast item, the day after turkey.
Lee Family Pumpkin Chip Muffins:
Preheat oven to 400 degrees; lightly grease two 12 cup muffin pans (or line with paper baking cups).
Beat 4 eggs in a bowl, mix in 2 cups of sugar, 1 can (15 oz) pumpkin, and 1.5 cups vegetable oil.
In a separate bowl, mix 3 cups flour, 2 teaspoons baking powder, 2 teaspoons baking soda, 1 teaspoon salt, and 1 teaspoon ground cinnamon.
Blend into the egg and pumpkin mixture.
Mix in chocolate chips (2 cups) and walnuts (optional).
Transfer to muffin pans.
Bake for 15 minutes.
Remove from pans and cool on wire rack.
