MACON, Georgia (41NBC/WMGT) -- Welch's Meats and Country Smokehouse located on Bass Road in Macon is near and dear to owner James Welch's heart.
"I grew up working in three different meat markets that my uncle and father had in Chicago," said Welch.
The specialty shop has been around for six years and sells everything from sauces, jams, and jellies to briskets, butts, and bacon.
Regular customer Daves Steed wants quality over quantity and shops at Welch's for just that. "It's just a great neighborhood meat market."
Welch says he's lived in Macon for 16 years and likes to support the state of Georgia. "We want high grade materials, high grade products, and something unique."
His unique products include 21 varieties of jerky, quality fresh meats, and Welch's stuffed pork chops.
Welch's Meats is located at 1687 Bass Road in Macon.
Welch's Stuffed Pork Chops Recipe:
Start with a boneless pork loin, cut into 1.5" chops
Cut a pocket into the fat side of the chop, do not cut all the way through
Using your favorite stuffing, firmly pack the pocket of the chop
Rub the chops down with a rub or seasoning of your choice
Set oven (or grill) to 375 degrees, cover the chop with foil, bake for 45 minutes
After 45 minutes, remove the foil and let brown for another 15-20 minutes
