FORT VALLEY, Georgia (41NBC/WMGT) -- The Peachtree Cafe at Lane Southern Orchards in Fort Valley was once just a single serving line with chicken salad and fruit cups. The chicken salad has remained a signature item since the early 1990's, even with the most recent addition of pecans to the recipe.
Customer Charletta Jackson said, "It has all the right ingredients without giving away any of the secrets, it's just right."
Jackson claims being a Southern girl, she knows a good chicken salad when she tastes one. "It's like how I make it at home, it's just good," she said.
Celery salt, mayonnaise, lemon juice, chopped pecans, and pickle relish are just some of the ingredients that make it such a popular menu item.
An employee at the cafe, Maria Escobedo said she enjoys making it, but likes eating it more.
"I like it so much. The chicken salad is delicious," according to Escobedo.
The bakery has also become a big part of the cafe, producing more than 30,000 loaves of bread per year.
The cafe is located at 50 Lane Road in Fort Valley.
Peachtree Cafe Chicken Salad Recipe
5 lb bag chicken, diced 5 inches
1 bunch fresh chopped celery
1 cup pickle relish
1 1/2 quarts mayonnaise
3/4 cup lemon juice
2 tablespoons celery salt, onion powder, and lemon pepper EACH
3 cups chopped pecans
Combine ingredients in mixing bowl, serve chilled
BYRON, Georgia (41NBC/WMGT) -- For more than a decade, Casa Mexico has served up some very authentic Mexican dishes.
Paola Zendejas who's worked at Casa Mexico said, "You can get real Mexican, like authentic Mexican in most dishes, or you can get Mexican-American too."
The cuisine is a blend of various flavors and a lot of colors. The dish that never runs out is what they call the House Special.
Regular customer Aimee Stanton drives to Byron from Macon at least a few times a month just to enjoy the House Special.
"I always come here to get the House Special, this is the only thing I order here," said Stanton.
Don Scozzari said Casa Mexico is his favorite place to eat in all of Middle Georgia.
"I've had the House Special so many different times and I enjoy it, it's wonderful."
The House Special is a combination of chicken, shrimp, onions, and mushrooms served on a bed of rice. Customers suggest the House Special at the house of Mexico.
Casa Mexico is located at 311 GA Hwy 49 N in Byron.
Casa Mexico House Special Recipe:
1 1/2 cups rice
1 can tomato sauce
1 tblsp. salt
1 garlic clove
1/2 cup sliced onions
2 tblsp. oil
2 cups water
melted white cheese
pepper to taste
Warm oil in sauce pan
Saute onions until golden brown
Add rice and fry
Mix tomato sauce, garlic, salt, and add to pan with water, then simmer
Place rice on plate, add white cheese, shrimp, chicken, onions, and mushrooms
Use soy sauce and pepper as desired
